My Vietnamese Cole Slaw

Ingredients Needed Are:
  • cabbage
  • carrot
  • salt and pepper
  • vinegar
  • olive oil
  • Shredded cooked chicken
Cole Slaw With Shredded Chicken

Process Of Making My Vietnamese Cole Slaw:
  • Thinly slice your cabbage into strips, but if you want to skip this process; then pick up a bag of already shredded cabbage at the store.
  • Do the same with two stalks of carrot
  • Mix the cabbage and carrot up
  • Sprinkle a bit of salt and either white vinegar, or whatever vinegar you have on hand
  • With your hands, knead these ingredients together until they are wilting, and then taste to see if it's to your liking. If you like a bit more sour; then add vinegar! If you like a bit more salt; then add salt! If for some reason your cole slaw is too sour or too salty; then rinse it with a little cold water, and re-mix it up
  • Add in your shredded pieces of chicken (I used left over), or shrimp.
  • Mix them all up with dash of olive oil
  • Top your cole slaw with fresh chopped mint and perilla if you have them, or cilantro.
  • Add cracked fresh pepper on top and give it a toss
  • Voila, you are ready to eat, or chill for later use
Fruits Salad
Oh, you know what to do with fruits, just cut them up into bite sizes and devour :-) This is also a great way to get fruits into your children's life as they can just pick one piece of fruit and pop it in their mouth.
