Chicken Breast With Potatoes In Curry Sauce

This dish is one of my stable dishes when time is crunched and food has not been bought. It's satisfying and delicious; not to mentioned quick and easy to make. So we shall just get right into the ingredients:
  • 5 pieces of skinless, boneless chicken pieces; cut into bite sizes
  • 1 medium onion, cut into small pieces
  • 2 potatoes; cut into bite sizes
  • 2 sweet potatoes; cut into bite sizes
  • 2-3 scallions for garnish
  • 1/2 cup of coconut milk
  • 2 teaspoons of curry powder



  • Heat up some cooking oil in a small pot
  • add onion pieces, chicken breast pieces, season with black pepper and salt; stir continuously
  • add potato pieces, season as you go
  • add curry powder
  • mix them up until they are coated well
  • add about 1/4 cup of water if it's dry
  • cover and cook until the potatoes are tendered
  • add coconut milk and let cook for another few minutes.
  • top with green onion and serve with hot rice or bread.
