Catching the last few days of warm weather we have left, we grilled these pork chops for dinner. The seasoning is very simple with salt, pepper, garlic powder, and minced onions. We like to keep the meat authentic.
Fried Red Skin Potato Chunks
Cut up some red skin potatoes into chunks, and slowly fried them in a bit of oil with a lid on. Not only they are not too greasy, they will cook evenly and thoroughly.
Top Fried Potatoes With Green Onion
Turn your potato chunks often to crisp up all sides. Before serving, add some chopped green onions, salt, pepper, and garlic powder. Toss them up a few times to coat them well.

glad to see someone utilizing the potatoe dish, it's really terrible that I always buy them with great intentions, and then let them rot in the frig. I know...what a waste.
