This complete meal consists of steamed rice, steamed broccoli florets, and cooked pork pieces with eggs. This simple combination of items is one of my son's favorite meals.
Steamed Rice, Eggs, Broccoli and Pork
- Cut up pork loin into bite sizes
- Marinate with salt, black pepper, and la choy soy sauce to taste
- In a pot, add some cooking oil
- Quickly stir in chopped pieces of onion, minced garlic, and thinly sliced ginger pieces. If you don't have them on hand, use what you have to flavor the meat.
- Add in your pork pieces
- Gently place 4 eggs on top of the meat
- Add about 1/4 of water
- Covered and cooked for 30 minutes, stir once in a while to soak all the meat
- Spoon out the eggs, run them under cold water, peeled, and returned to the pot
- Stir the eggs so they can get some sauce on them
- Cook for another 15 minutes
- Serve with steamed hot rice
JoJo served me this sinfully delicious Sara Lee Strawberry Cheesecake after our simple but complete meal! He even decorated with squiggle line of chocolate.
I've never had a meal like that but it looks very good.
