This dish is one of my stable dishes when time is crunched and food has not been bought. It's satisfying and delicious; not to mentioned quick and easy to make. So we shall just get right into the ingredients:

- 5 pieces of skinless, boneless chicken pieces; cut into bite sizes
- 1 medium onion, cut into small pieces
- 2 potatoes; cut into bite sizes
- 2 sweet potatoes; cut into bite sizes
- 2-3 scallions for garnish
- 1/2 cup of coconut milk
- 2 teaspoons of curry powder
- Heat up some cooking oil in a small pot
- add onion pieces, chicken breast pieces, season with black pepper and salt; stir continuously
- add potato pieces, season as you go
- add curry powder
- mix them up until they are coated well
- add about 1/4 cup of water if it's dry
- cover and cook until the potatoes are tendered
- add coconut milk and let cook for another few minutes.
- top with green onion and serve with hot rice or bread.
