However, I found an easy recipe to try, so I must try.
***Cut the cauliflower in their flowers shape, and steamed until they were soft enough without breaking them when handling them.
***Chopped up 1/2 a purple onion and set aside.
In a mixing bowl, combine:
***2 tablespoons of almond milk Greek yogurt
***2 tablespoons of vegan mayonnaise, if you don't have some or can't find it in the store, you can make your own, which you can find in this link.
***Salt and pepper
***2 tablespoon relish, or chopped dill pickle
***Sprinkle of paprika
***Some chopped fresh dill
***2 tablespoons of Dijon mustard
***Add your purple onion
***Mix cooked cauliflower and sauce together, add more salt and pepper to your taste, CHILL FOR AT LEAST 20 MINUTES in the refrigerator, and finally sprinkle some more paprika and fresh dill on top before serving.
This was my first time making cauliflower (potatoes-like salad)! I must say, they were so good, so tasty and very refreshing.

What a fabulous recipe.
ReplyDeleteWe love cauliflower dishes in our house, but it can be expensive.
I sometimes use broccoli instead if the recipe swaps out well, it is often a little cheaper.
Don't you just love veggies though :)
